8 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell pepper, diced (any color)

1/2 cup red onion, finely chopped

1 cup cooked and crumbled bacon (or chickpeas for a vegetarian option)

1/2 cup mozzarella pearls

1/4 cup fresh parsley, chopped

1 cup mayonnaise

1 tbsp Dijon mustard

1 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Instructions

Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to cool.

    In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, crumbled bacon (or chickpeas), mozzarella pearls, and fresh parsley.

      In a separate bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth.
