Mandarin Orange Jello Salad

Ingredients
  

1 package (3 oz) orange-flavored gelatin

1 cup boiling water

1 cup cold water

1 can (11 oz) mandarin oranges, drained

1 cup mini marshmallows

½ cup chopped walnuts (optional)

1 cup whipped topping (thawed)

1 tsp vanilla extract

Instructions

In a medium bowl, dissolve the orange-flavored gelatin in the boiling water. Stir until completely dissolved.

    Add the cold water to the gelatin mixture and mix well.

      Allow the gelatin to cool to room temperature, then refrigerate it for about 30 minutes until it begins to thicken but is not fully set.

        Once thickened, gently fold in the drained mandarin oranges, mini marshmallows, chopped walnuts (if using), and vanilla extract.

          In a separate bowl, fold the whipped topping into the gelatin mixture until well combined.

            Pour the mixture into a mold or serving dish. Cover and refrigerate for at least 4 hours or until the salad is firm.

              To serve, cut into squares or scoop into bowls, and optionally garnish with additional whipped topping and mandarin oranges.
